Oh, I see… sorry, didn’t understand. Unfortunately, the Separation Preview pretty much always shows CMYK plates. Same thing in Output Preview in Acrobat. In other words, even if there is nothing on those plates, they still show up in the list.
Don’t be scared to ask! Always better to ask. :-)
If you include spot colors in your document, they’ll be in the PDF, too. See this article:

Simon, we just noticed that you tried to post this a couple of weeks ago and it was “stuck” in our forum software’s moderation queue. I’m not sure what happened. Were you able to post this successfully elsewhere on the forum and get a reply?
Each page in an InDesign document can have its own size, controlled with the Page tool in the tool panel. Select the Page tool and click the page and the control panel will show you the page. It’s possible that one or more of your pages has a custom size.
I don’t think there is any easy way to add more pages after you’ve created the data merge document. But you could create a new PDF and then “collate” them:

Hanging punctuation (Optical Margin Alignment) usually does not put the punctuation entirely out of the margins. It usually just moves a little bit. You can adjust how much with the Size field in the Story panel, but it is very difficult to get the punctuation entirely outside.
