That’s a challenge, for sure. If you think the book will likely not be updated in the future, then perhaps your idea of using an old version of InDesign might work… just to get it done.

Personally, I’d likely try to push through and update the fonts and everything, especially if there will be significant updates anyway.

For fonts where you can’t get the OT versions, you might be able to get away with converting them to OT, like this:
