There are other “alternatives,” depending on what you workflow requires. For example, a number of companies now use WordsFlow or DocsFlow from Em Software (https://emsoftware.com), which lets you link external word processing files to InDesign, so that you can keep editing in Word (or Google Docs) and also in InDesign.
Why have they just about given up on it?

The grep code \* will search for all asterisks.
The grep code (?<=\d)\* will search for "all asterisks that immediately follow a digit"
The code \d+\K\* will search for "all asterisks that follow a slash followed by one or more digits"
Here is one challenge, though: If you have fractions that can cause problems. For example, these codes do not know the difference between 1/2 and 9/11.
GREP Styles cannot add text, like an asterisk. You’d have to add that with something like a Find/Change. But after that, it’s not hard with grep styles to set up a pattern like: “Apply a color to all the asterisks that follow a number”
Yeah… the running header feature is somewhat limited. There was a plug-in from in-tools.com called PowerHeaders that provided a lot more control like this, but it hasn’t been updated in years. I keep hoping someone will update it!
My guess is that you will need to create 2 or more different kinds of paragraph styles. One that applies italic to the latin next, and a different paragraph style that does not apply the italic to the text.
