But to your question: Yes, if you combine multiple PDF files in Acrobat, they retain their same settings.

For the cross-references, there are some scripts to make the cross-references, such as:

and then you could probably copy and paste the x-ref text.There are also some powerful x-ref tools in Cross References Pro: https://www.dtptools.com/product.asp?id=crin&more=downloads (but I don’t know if it will do what you want)
What you’re describing is often done with commercial catalog tools, such as Teacup DataLinker, 65bit EasyCatalog, Em Software’s InCatalog, and so on.

And it’s important to differentiate between the Paragraph Styles panel and the Character Styles panel. Very different.

Or, you could search for all text in the Find/Change dialog box (leave “find what” empty) and format it with the language. But using styles is better.
