ParticipantA lot has changed in the years since CS2. ID will export HTML by using the File > Export For > Dreamweaver command.
The HTML will be defined using CSS classes. You'll need to choose the appropriate setting for the CSS export. The one I would recommend is Include Style Definitions.

ParticipantThis is a feature that was put in place to speed up the process of moving objects and scrolling through pages. There's no way I know of to change it.

ParticipantYou might try exporting that file to IDML and opening that. That might clear out any corruption in the file.

ParticipantI've some reports of folks having issues with docs created in earlier versions when working in CS5. Try exporting to IDML after opening the file. Then work on that.

Does it work incorrectly? Does this problem effect all files?
Have you tried right clicking and choosing text frame options that way?
Do you have a workspace that doesn't show all menu items enabled?

ParticipantWas Snow Leopard a clean install or an in place upgrade over an earlier operating system? If it was an in place upgrade I can only tell you that my experience with it was a disaster and the beachball when trying to print was one of the reasons why I gave up on it and erased the harddrive and did a clean install.

ParticipantMaster pages is one of those areas where Quark users really need to change the way they think. You cannot get InDesign masters to behave like Quark's and the more you use InDesign the more you'll see why that's a good thing.
For running heads you can use a running header text variable. I assume that the text you're wishing to use is a chapter or section title of some sort. The first step to make this work is to create a paragraph style that will only be used for those titles.
Once that's done go to your master page and draw a text frame where you want the running header to appear. Use the Type > Text Variables > Insert Variable command and choose Running Header. Then choose Type > Text Variables > Define to define the variable by choosing it from the list and clicking edit. In the Edit Text Variable dialog box choose the paragraph style you created.
Apply your title paragraph style as needed to your text and watch InDesign do it's magic.

ParticipantDesaturating does not remove the color from the image, it just makes it look grayscale. You need to convert to grayscale. If you know what Pantone color you'll be using, you might want to convert that to duotone in Photoshop. That will give you greater control than just colorizing it in InDesign.
