Should I use text variables?

      I've never used them, btw…

Problem: in my body text there is a reference to the page number where Chapter xx starts, but what if it changes after the revisions, adding boxes/pictures, etc?

I tried having a look at the Text Variables>Define options but non of them looks quite useful in this situation.

      Maybe a cross reference?

Well, I guess for you guys it should be just too trivial, please show me the light!

      Thx,

Use a cross-reference. Text variables pick up a text in a certain character or paragraph style (amongst other things), and you cannot use these to refer to a page — but a cross-reference can.

The “target” for a cross-reference can be a page, but in this case you should use a text anchor, which is inserted into the text itself. If the text (to be precise, as you hopefully realize, that particular text anchor) runs onto another page, ID will update the reference to it with the new page number.
