When learning new keyboard shortcuts in some tutorials I have been doing, it says that for
example F11 opens the paragraph dialogue box, however mine is the
volume button and even though I go into my system preferences under
exposes and re assign it, it still doesn't work. And
F12 doesn't open the pages panel? Do I have to set up
my keyboard so it works for most shortcuts somewhere? And
another thing that doesn't work on my keyboard is “shift page down”
to move down to the next page in the document. For some reason, this
doesn't do anything? I have one of the latest condensed keyboards.
      Does this make a difference?

its a mac thing. go to the dock and go to the system preferences. go to keyboard and make sure that the checkbox which says “Use all F1, F2, etc keys as standard function keys is turned on” AND go to the keyboard shortcuts tab and scroll through the items which interfere with the indesign shortcuts and turn them off.

otherwise, if you want to keep the mac default shortcuts and change indesign's shortcuts, go to the edit menu and go edit shortcuts. the defaults can't change, but a new set can be created, so anyone else using the machine can change the workspace to the default and use the keys they may be familiar with.
