I am working with a bunch of tables that have many varied styles. For example one row has a cell style for color and height, plus a character style for font and text color. Is there some way to “group” the Cell Style and the Character Style so I only have to click one option to get the two styles applied?

I had hoped that the eyedropper tool might pick up both cell and character style but it seems to have a mind of its own when it comes to tables.

If you want a one-click way to format the cell attributes and the attributes of the text within it… yes.
In the options for Cell Style > General, you can set a paragraph style to be automatically applied to the text within the cells that have this cell style. At least in CS6 you can.
Would that work? Most text formatting options are available via the Para style options

      Chris.

Remember: you should (almost) never apply a character style to a whole paragraph of text (or all the text in a cell). Use paragraph styles for that.
