If you’re looking for simple self-paced learning, I’d have to agree with David that you can’t beat lynda.com. Both Anne-marie and myself have InCopy courses on Lynda.com that will help you get up to speed. As much as I’d like to say otherwise, not much has changed in InCopy over the years aside from added features to make it work with InDesign.
