    I've finally set up an iTunes Connect account with Apple (iBookstore) for my ePub.

    They now allow you to include a sample ePub for preview by customers.

    I have the complete ePub file.

    Working from the complete ePub file, how do I create an ePub that would show only the first chapter? And is there anything else that I should consider in the process?

    Working from the complete epub file, you would need to:

    1. Unzip it (extract the contents) into individual files
    2. Remove the XHTML files and jpg/gif images representing the content you don't want to include
    3. Edit the content.opf file and the toc.ncx file to remove all references to the deleted content
    4. Possibly edit the XHTML file(s) containing links to missing content, such as an HTML TOC, if you included one… removing the links (though you could keep the text intact so people could see what they're missing)
    5. Rezip the file, converting it back to an EPUB
    6. Validate the EPUB again

    In many cases it'd be easier to just create a new, sample-size INDD file and export to EPUB, especially if you have a lot of cross-references, footnotes, an index, etc.
