Thank you, David! The second option was exactly what I needed. GREP is so powerful, but difficult for me to wrap my little brain around.
Not a perfect solution, but if you open a 2014 file by using File>Open and check the “Open Original” radio button at the bottom, at least when you save the file, InDesign knows where the original file is at and takes you directly to that spot.
Thank you, David. I have used Blurb, and they are great. They can even get better pricing if you have enough lead time to have the printing done in China, though I don’t know that is the direction I want to go for this project.

Changing the file association should do just that.
You can change the file association by opening Bridge and going to the preferences>File Type associations. Find PDF and change the pull down menu to the right to Illustrator.
