I’ve just sorted out my problem with the help of this link, (using the second option proposed):
Adobe InDesign: Tables That Won’t Accept Table and Cell Styles
It amounts to option/alt-clicking within the character/paragraph/table/cell styles panels to fully remove the stickier overrides that prevent table styles from being applied. Hopefully it helps you too.
What is the source of your table?
I am having a similar problem when working with linked tables. Those are from a linked .doc file that has been generated from google docs.
So far as I can tell, the tables have no formatting in terms of cell fills, yet applying the table style doesn’t apply my alternating fills.
