One more important (and not immediately obvious) thing about strokes in tables: You need to select the cells you want to change first (by dragging over them with the Type tool), and then choose the sides of the cells you want to control (change the stroke of) in the Tables panel (or Control panel). Choose sides by clicking on the sides of the icon to turn on/off each segment (or triple-click to turn all on/off).
