You can do that in InDesign. Just select the object with the Selection (black arrow) tool, then click the Pen tool. Hover over a point to delete it, hover over a line segment to add a point… you can use the Convert Direction tool (click and hold the pen tool to see additional tools) to change from corner to curve, etc.
