I know this sounds like something that should be straightforward, but it’s actually not possible for a good reason:
The tab character is not just “a space”, right? The text after the tab character is positioned at a specific place horizontally. So centering the text really messes up InDesign’s idea of where everything should go. So it punts.

Most people who do this actually want some specific amount of space between two columns, and then they want that whole thing centered. It’s a variation of this problem:

One way you might approach it is to create a line and add it as an inline object between the two columns. Now make the line stroke set to “None” so it pushes the lines apart but you can’t see it.
