Your 1/2 margins are okay for Staples. You mean Staples the store correct? Spiral bound is no big deal honestly. Your plan for layout will work. Layout in facing pages. Use 3/4 on inside margin and 1/2 on others.

How many pages in your publication?

You can easily pull pages apart at any point. Upstream or downstream. You can do it in InDesign, on export, or on Acrobat. It’s sort of a basic thing….
