Hi Carrie

Either the PDFs exported from iBooks Author or the interactive PDFs you mention can be placed in to InDesign and a fixed layout EPUB then generated.

CircularFLO has tools to help you do this and to make sure that the live text in the PDFs remains searchable in the final fixed layout EPUB3. https://www.circularflo.com/instructions/#pdf_tools
