how can i select all the text that has a certain size, e.g. 11 pt, in a document like a book (with titles, subtitles, captions, non-concatenated text) in order to reduce / increase the size.

      Use Find
Set nothing in the FIND/REPLACE fields
In FIND FORMAT enter the font size you want say 11pt.
Best to then apply a Paragraph style to all the text found. Then you can just edit the Paragraph format to change the text parameters.
