I’m glad you are progressing. Yes, Indesign comes with a script to unthread the whole document in one go. I’m a Windows user basically but I do have a Mac. I just installed from scratch the APID Tool Assistant and TextStitch. It took me a few minutes to figure it out. But finally I can see the API app and TextStitch on ID CC 2014. I had to double click on the unloaded files to unzip them. You’ll see the TextStitch.spln with a green icon. Select it, copy and paste it to plugins on ID CC 2014. You need to do this while ID is not running. Then the next time you open the application and you click on API on the top menu Text Stitch should be just below APID ToolAssistant. If needed reboot your Mac.
