Just Turn Off or Uncheck the “Page Information” option under Marks and Bleeds while exporting PDF. The page information uses the Helvetica Font. If you delete that from the PDF, there will be no fonts under the Document Properties.
What a pity, you can’t convert that information to Outline :)
